Ever struggle with what to make for dinner? Most of the time, I like to have a plan. (Click here for more on simple meal planning.) But this week, a plan just didn’t happen and I was flying by the seat of may pants.
Tuesday evening, I was really struggling. We are getting ready to open and online boutique and decided to launch it with a home show so that local customers could come out to see what kinds of things we have.
Add to that working a full time outside job, along with some other things we had going this week and it has been crazy. This is also the reason I was unable to get a post out last night. I try to post on Wednesdays and Fridays, but exhaustion set in before I could finish.
The more I tried to just push on through, the bigger mess I made, so I finally just gave up and went to bed. Sometimes we just need a little rest so we can come back to a task refreshed and ready to get it done!
So, back to Tuesday evening… it had been a very busy day, and I still had no idea what to make for dinner.
As I was mentally going over what we had on hand and trying to decide what could be put together out of what was available, a new recipe emerged.
My daughter and I are all about doing some made up recipes. If we all like it, my husband tells us to write it down before we forget how to make it.
Sadly, I usually don’t get around to writing it down before I have already forgotten. The struggle is real, ya’ll. My memory is sketchy. I really hope it’s from having a whole lot of irons in the fire and I’m not losing it!
So, this time, I am writing it down so that we can have it again. And maybe you might like to try it too!
In the interest of honesty and full disclosure, I didn’t do the cooking. I just sort of decided what to put in it, and let my daughter do rest. (She is an amazing cook!)
Here’s what we came up with:
Easy Taco Skillet Dinner
- 1-2 Pounds Ground Beef
- 1 Package Taco Seasoning
- 1 8-oz. Package Cream Cheese
- 1 Can Black Beans Rinsed and drained
- 2 Cans Mexicorn Drained.
- 2 Bags Knorr Fiesta Sides Taco Rice Prepared according to package directions.
Brown and drain the ground beef.
Stir in taco seasoning.
Add cream cheese and mix well.
Add black beans, then Mexicorn and rice, mixing each ingredient in well before adding the next so that all ingredients are well combined.
This is a quick and easy meal you can have on the table in less than half an hour. We served it with tortilla chips, salsa and sour cream.
It isn’t every day that we try a new recipe that the whole family likes, but this time, they did! So maybe this will be one that will go into the regular meal rotation.
