Pork Tenderloin & Vegetable Skillet: Simple And Delicious

Pork tenderloin and vegetable skillet…yummy!

This was not what I had intended to do with this pork tenderloin, but since I got up too late to put in the crock pot this morning, this was what I came up with.

Do ya’ll do that too?

Or am I the only one to have one thing in mind, only to have it change with circumstances?

Circumstances this morning were that if I put that tenderloin in the crock pot as planned, I was going to be late for work!

And so, I cut it up in slices, and pulled out my old faithful friends, the Badia Complete Seasoning and olive oil.

If you have never used this stuff, let me just say, it is AWESOME!

But I had to go all the way to Nicaragua to find out about it. The team house where we stay when we go on mission trips has a wonderful kitchen staff, and we eat very well!

One night they made some pork chops and when we inquired about the seasoning, they brought out this stuff to show us.

My friend Shelia and I were determined to get some to try at home.

So, the next day, we went to the grocery store in Chinandega, Nicaragua and bought big containers of Badia Sazon Completa.

Then, we used precious luggage space to bring it home on the plane. Oh, the journey those containers of seasoning made to get from Central America to Alabama.

And then…

A couple of days later, I was in Winn Dixie.

And guess what I found? Yep.

Our little special seasoning right here in the U.S.A.

I was so excited I immediately took a picture and texted it to Shelia to show her what I found.

Her response? “Yeah, I just discovered they have it at Walmart too.”

And there you have it. We had to go around the world to find something right here on our local grocery shelves!

But at least we found it.

It is so versatile.  We use it on chicken a lot, and it also works with beef or fish.

The pork tenderloin that I made tonight could not be a any easier. Here’s what I did:

  1. Cut the tenderloin into 3/4″ slices.
  2. Drizzle olive oil into a large skillet, and sprinkle Badia Complete Seasoning evenly over the bottom of the pan to blend with the olive oil as it heats. (You may need to swish the oil around a little to get the seasoning mixed in.)
  3. Brown one side, turn each piece of pork over and sprinkle on more seasoning. Finish browning the other side and you’re done!

To go with it, we had a vegetable skillet. You can do this with pretty much any kind of veggies, but I used 3 squash, 4 potatoes and a large onion.

To make the vegetables, I used a large iron skillet. This was also very simple. This is what I did:

  1. Preheat oven to 400.
  2. Spray bottom and sides of an iron skillet with cooking spray. (If you don’t have an iron skillet, a glass baking dish will work. But there’s just something about the taste of of veggies in an iron skillet.)
  3. Layer thin slices of unpeeled potato, squash and onion, adding salt and pepper to taste between each layer, then top with about 3 Tablespoons of butter. If your skillet has a lid, cover with the lid. Mine doesn’t, so I had to use foil.
  4. Bake for one hour.
  5. Remove from oven and carefully remove the foil or lid. Stir to make sure salt, pepper and butter are incorporated throughout.

The family loved it! I have never done much with pork tenderloin, but we liked this well enough that it will probably go on the “rotation” of weekly meals.
